Tonight’s pizza was another great success. My sourdough pizza dough always performs. I had my doubts today as the initial proof looked like it was going to be too much for a risen crust. It performed perfect. Topping tonight was grated pepperoni (Thanks Jim and Nancy to the tip), diced red onion and spicy banana peppers. Extra cheese tonight because it was close to the end of the bag … and why not! And coming from Colorado where their Beau Jo’s pizza is a thing, they put out honey on their tables to dip your crust into. We’ve been doing that ever since our first trip to their Idaho Springs location more than 30 years ago. YUM!
