Although I baked 7 loaves today (after 10 loaves and SEVEN dozen cookies on Friday), today’s bake included a dozen English Muffins! I feel I have dialed in the cast iron pan temperature to give the best slightly browned surface. The first several batches were a little all over the place, but this batch was great! Plus, I have a few more packs to make for tomorrow. I’m really liking the English Muffin process, which is a bit of a departure from the standard sourdough loaves I make.
