Today’s bake is full of special stuff! First off, I am very happy how the new aliquot jar worked out. It looks like I was not proofing long enough before cold fermentation. Not by a lot, but enough to notice a volume difference in the end.
Other than that, I have to NEW experiments on deck. First off, I have another test bake with Sourdough Oatmeal Raisin cookies! I’ve not tasted any of these yet, but they look promising.
The next test is a Double Chocolate Sourdough English Muffin Tasting loaf! This is one that I’ve been thinking about for a while now, and I had a little extra active starter yesterday so into the loaf it went. Tasting profile will follow in its own post, either later today or tomorrow.
Other than that, I had four BIG loaves, 36 wedding cookies, and a half dozen Sourdough Chocolate Chip cookies through the oven. Not a bad Monday!
